A frittata is an easy meal to make during the week. For people who work, you can make this one night, and then take it to work for lunch the next day. In this recipe we use potatoes and Curly Leaf Kale, along with paprika and Parmesan cheese for some subtle seasoning.

 Remove stem from kale and chop up into ribbons

Saute in olive oil

beat 10 eggs

Add a teaspoon of salt and some pepper and 2 tablespoon of flour

Cut up two boiled potatoes

Add olive oil to pan and heat

Add potatoes and cook and cook a little

Add kale and beaten eggs

Let it brown on the bottom then cook on low

Add some chese to the top

Add some semi sweet paprika for color

Cover skillet and cook on low heat 15 minutes

Run knife along edge
